Before I begin this week, I just want to say this is not a commercial. I just want to show you something that is helpful when I just gotta eat something that has nothing to do with my regime. OK did I say some days I just gotta cheat? I am a perfectly normal person who from time to time cannot resist the taste of some really good pasta. But I have found a really good substitute for regular pasta. Dreamfields is a pasta that is rich with fiber and plant proteins. It has 5g of fiber and 7g of protein. WAIT! Don’t turn up your nose. Let me tell you why this pasta really works: It doesn’t blow up in your belly like regular pasta: Ever eat spaghetti or bread and wonder why you get full fast? The wheat expands in your stomach right away. Dreamfields contains prebiotic fiber which helps promote healthy digestion. I swear it cooks up just like traditional pasta: Just follow the directions on the box and the pasta tastes like any other pasta you eat. Now my sister tells me she has overcooked it and it still came out really good. The true test is serving it to others when they have no idea it is low carb pasta. My friend came over last week and took a container of spaghetti home with him. He called the next day to see if he could get some for lunch! He never knew the difference. Dreamfields comes in all types of pasta….even lasagna noodles! You can buy it at a regular grocery store: I bought this box at Wal-Mart. C’mon, how common is that? I need things I eat to be accessible where I shop. I am not the type who grocery shops at two or three stores to get my weekly groceries. So here is a great recipe for meat sauce. During the winter months I believe in doctoring Ragu. In the summer, I will make it from scratch from tomatoes from the farmers market. But anyway it goes this always works: 1 Onion finely chopped 1 Green Pepper finely chopped 2 Cloves of Garlic 1 Jar of Ragu garlic and peppers (or whatever flavor you like) ½ a Jar of water (use the Ragu jar) 2 Tablespoons of oregano 1 pound of meat (you choose: turkey, beef or Italian sausage) watching carbs? Add a 1 1/2 pound of two different meats 1/2 teaspoon of red pepper flakes ¼ of cup a Parmesan cheese One 16 ounce container of mushrooms Cook meat in a medium size pot. Don’t use a skillet. You want the room of a deep pot. Cook meat on a low heat with garlic, green pepper, oregano, red peppers and onion. Drain off fat. Add Ragu, water and mushrooms. Simmer on a low heat for one hour. Stir mixture every ten minutes to make sure the vegetables don’t stick to the bottom of the pot. Right before you turn off the fire….add the Parmesan into the mixture. This is is ready to serve over your pasta. Please remember to follow the directions on the box. Love this saying: Cooking with love provides food for the soul. Peace….
